Creamy Tomato Pasta

Ingredients
- 1 small onion (approx. 80 g), peeled and halved
- 1 clove garlic, peeled
- 15 g olive oil
- 200 g canned chopped tomatoes
- 15 g tomato paste
- 300 g vegetable stock
- 1/2 tsp dried oregano
- 1/4 tsp salt
- Pinch of black pepper
- 150 g short pasta (e.g., penne, fusilli)
- 50 g cooking cream (or single cream)
- 20 g Parmesan cheese, grated
- Fresh basil leaves, for garnish
Instructions
- Add onion and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
- Add olive oil. Sauté 5 min / 120°C / Speed 1.
- Add chopped tomatoes, tomato paste, vegetable stock, dried oregano, salt, and pepper to the mixing bowl. Cook 5 min / 100°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup to prevent splatter and allow some evaporation.
- Add pasta to the mixing bowl. Cook according to package instructions (typically 8-12 minutes) / 95°C / Reverse / Speed 2. Ensure pasta is submerged in liquid. If needed, add a splash more hot water or stock during cooking.
- Pause the cooking, scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking and prevent sticking. Check thickness and adjust liquid if needed. Continue cooking.
- Once pasta is cooked al dente, add cooking cream and grated Parmesan cheese. Cook 1 min / 90°C / Reverse / Speed 1 to combine and settle the sauce.
- Serve immediately, garnished with fresh basil leaves.
