Creamy Tomato Pasta

Ingredients
- 1 onion, quartered
- 2 cloves garlic
- 20 g olive oil
- 20 g tomato paste
- 400 g canned chopped tomatoes
- 500 g vegetable stock
- 1 tsp salt
- 0.5 tsp black pepper
- 250 g short pasta (e.g., penne, fusilli)
- 100 g cooking cream
- 30 g fresh basil leaves, chopped
- 30 g Parmesan cheese, grated (optional, for serving)
Instructions
- Place onion and garlic in the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add olive oil. Sauté 5 min / 120°C / Speed 1.
- Add tomato paste. Cook 2 min / 100°C / Speed 1.
- Add chopped tomatoes, vegetable stock, salt, and pepper. Place the simmering basket on the lid instead of the measuring cup to allow steam to escape. Cook 10 min / 100°C / Speed 1.
- Add pasta to the mixing bowl. Cook according to package instructions (typically 8-12 min) / 100°C / Reverse / Speed 1.5. After half the cooking time, pause, scrape down the sides and bottom of the bowl with the spatula, and check the liquid level. Add a splash of hot water if the sauce seems too thick or dry. Continue cooking.
- Once the pasta is al dente, add cooking cream and fresh basil. Cook 1 min / 90°C / Reverse / Speed 1.
- Serve immediately, garnished with grated Parmesan cheese if desired. For the last 1-2 minutes, if needed, run 90°C / Speed 1 (Reverse) to ensure even distribution and prevent sticking.
