Creamy Tomato and Spinach Pasta

Ingredients
- 1 onion, halved
- 2 cloves garlic
- 20 g olive oil
- 400 g canned chopped tomatoes
- 500 g vegetable stock
- 250 g dry pasta (e.g., penne, fusilli)
- 1 tsp dried oregano
- ½ tsp salt (or to taste)
- Pinch of black pepper
- 100 g fresh spinach
- 100 g cream cheese
- 50 g Parmesan cheese, grated (plus extra for serving)
Instructions
- Add onion and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with a spatula.
- Add olive oil. Sauté 5 min / 120°C / Speed 1.
- Add chopped tomatoes, vegetable stock, dried oregano, salt, and black pepper to the bowl. Cook 5 min / 100°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup to prevent splatter and allow for some evaporation.
- Add the dry pasta to the bowl. Cook for the time indicated on the pasta package (typically 10-12 minutes) / 100°C / Reverse / Speed 1.5. After about half the cooking time, pause, scrape down the sides and bottom of the bowl with the spatula, and ensure the pasta is submerged in the liquid. Continue cooking.
- Once the pasta is cooked, add the fresh spinach, cream cheese, and grated Parmesan cheese to the bowl. Mix 1 min / 90°C / Reverse / Speed 1 to combine and melt the cheese.
- Check the seasoning and adjust if necessary. Serve immediately, garnished with extra Parmesan cheese if desired.
