Creamy Tomato and Spinach Pasta

Ingredients
- 1 onion, halved
- 2 cloves garlic
- 20 g olive oil
- 400 g canned chopped tomatoes
- 500 g vegetable stock
- 1 tsp dried oregano
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 250 g dried short pasta (e.g., penne, fusilli)
- 100 g cooking cream (or plant-based cream)
- 100 g fresh spinach
- Parmesan cheese, grated (for serving, optional)
Instructions
- Place onion and garlic in the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add olive oil. Sauté 5 min / 120°C / Speed 1.
- Add canned chopped tomatoes, vegetable stock, dried oregano, salt, and pepper to the mixing bowl. Insert the simmering basket on top of the lid instead of the measuring cup to prevent splatter. Heat 5 min / 100°C / Speed 1.
- Add dried short pasta to the mixing bowl. Cook for the time specified on the pasta packet plus 2 minutes / 100°C / Reverse / Speed 1.5. Pause halfway through cooking (e.g., after 5-6 minutes), scrape down the sides and bottom of the bowl with the spatula, and gently stir the pasta to ensure even cooking and prevent sticking. Continue cooking.
- Once pasta is cooked, add cooking cream and fresh spinach to the mixing bowl. Cook 2 min / 90°C / Reverse / Speed 1.5, or until spinach is wilted and sauce is heated through. Ensure the mixture is moving well to prevent sticking.
- Serve immediately, garnished with grated Parmesan cheese if desired.
