Creamy Spinach Spaetzle

  1. To prepare the Spaetzle dough, add eggs, 100 g water (or milk), 1 tsp salt, and a pinch of nutmeg to the clean Thermomix bowl. Mix 10 sec / Speed 4.
  2. Add 300 g plain flour to the bowl. Mix 30 sec / Speed 5. Scrape down the sides of the bowl with the spatula. Mix another 10-20 sec / Speed 5 until a thick, smooth dough forms.
  3. Transfer the dough to a separate bowl, cover, and let it rest for 15-20 minutes.
  4. Clean the Thermomix bowl. Add 1500 g water and 1 tsp salt to the bowl. Bring to a boil 15 min / 100°C / Speed 1, or until the water is visibly boiling.
  5. While the water boils, prepare a large bowl of ice water. Place the Varoma dish on top of the Thermomix lid. Place a Spaetzle maker or a colander with large holes on the Varoma dish.
  6. Working in batches, press the rested dough through the holes of the Spaetzle maker into the boiling water in the Thermomix bowl. Cook for 2-3 minutes until the Spaetzle float to the surface.
  7. Scoop out the cooked Spaetzle with a slotted spoon and transfer them to the bowl of ice water to stop the cooking process. Drain well and set aside. Repeat for the remaining dough. Discard the cooking water from the Thermomix bowl.
  8. To prepare the spinach sauce, add the onion and garlic to the clean Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
  9. Add 20 g olive oil to the bowl. Sauté 3 min / 120°C / Speed 1.
  10. Add 500 g fresh spinach (or 250 g frozen spinach) to the bowl. If using fresh spinach and it's bulky, add in batches, cooking until wilted before adding more. Cook 5 min / 90°C / Speed 1 / Reverse. Place the simmering basket on the lid instead of the measuring cup to allow slight evaporation.
  11. Add 150 g vegetable broth, 100 g cooking cream, salt, black pepper, and a pinch of nutmeg to the bowl. Cook 5 min / 90°C / Speed 1 / Reverse. Continue to use the simmering basket on the lid.
  12. Check the seasoning of the sauce and adjust if necessary.
  13. Add the cooked Spaetzle to the Thermomix bowl with the spinach sauce. Gently mix 30 sec / Speed 2 / Reverse to combine everything without damaging the Spaetzle.
  14. Serve immediately, garnished with fresh herbs if desired.
