Creamy Salmon Pasta

  1. Cut the salmon fillets into 2 cm cubes. Season with ½ tsp salt and ¼ tsp black pepper. Set aside.
  2. Add onion and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
  3. Add olive oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1 (Reverse).
  4. Add white wine (if using) and vegetable stock to the bowl. Bring to a boil 5 min / 100°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup to prevent splatter and allow some evaporation.
  5. Add the pasta to the mixing bowl. Cook according to package instructions, typically 10-12 min / 100°C / Speed 1 (Reverse). Continue to place the simmering basket on the lid.
  6. After 5 minutes of pasta cooking, pause and scrape down the sides and bottom of the bowl with the spatula. Check the liquid level and add a splash more hot water or stock if the pasta seems too dry. Continue cooking.
  7. Once the pasta is almost al dente (about 2 minutes before the end of its cooking time), add the cooking cream, lemon juice, chopped dill, and the seasoned salmon cubes to the bowl. Cook 2 min / 90°C / Speed 1 (Reverse).
  8. Check the salmon for doneness and the pasta for desired texture. Season with the remaining ½ tsp salt and ¼ tsp black pepper, or to taste. Mix gently 30 sec / 90°C / Speed 1 (Reverse) to ensure everything is well combined and settled.
  9. Serve immediately, garnished with fresh parsley if desired.
