Creamy Root Vegetable Soup

Ingredients
- 150 g onion, peeled and quartered
- 2 cloves garlic, peeled
- 20 g olive oil
- 200 g leeks, white and light green parts, cleaned and roughly chopped
- 200 g carrots, peeled and roughly chopped
- 150 g turnips, peeled and roughly chopped
- 300 g potatoes, peeled and roughly chopped
- 800 g vegetable stock
- 1 tsp salt, or to taste
- 0.5 tsp black pepper, or to taste
- Fresh parsley or chives, for garnish (optional)
Instructions
- Add onion (150 g) and garlic (2 cloves) to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add olive oil (20 g). Sauté 5 min / 120°C / Speed 1. For chunky vegetables, use Reverse mode.
- Add chopped leeks (200 g), carrots (200 g), turnips (150 g), and potatoes (300 g) to the mixing bowl. Cook 3 min / 100°C / Speed 1 (Reverse) to gently combine with the aromatics.
- Pour in vegetable stock (800 g). Add salt (1 tsp) and black pepper (0.5 tsp). Place the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splattering. Cook 25 min / 100°C / Speed 1 (Reverse).
- After 15 minutes of cooking, pause the machine. Carefully remove the simmering basket and scrape down the sides and bottom of the mixing bowl with the spatula. Check the thickness and adjust liquid if needed. Replace the simmering basket and continue cooking.
- Once cooked, carefully remove the simmering basket. Secure the measuring cup in place. Blend the soup by slowly increasing the speed from Speed 5 to Speed 9 over 1 minute, until smooth and creamy. If you prefer a chunkier soup, blend for a shorter time or at a lower speed.
- To settle and prevent sticking, cook for a final 1 min / 90°C / Speed 1 (Reverse).
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley or chives if desired.
