Creamy Rice Milk Pudding

Ingredients
- 150 g short-grain rice (e.g., Arborio or pudding rice)
- 1000 g rice milk (or other plant-based milk)
- 80 g caster sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- Optional: 1 cinnamon stick
- Optional: zest of 1/2 lemon
Instructions
- Place the short-grain rice into the simmering basket and rinse thoroughly under cold running water. Set aside.
- Insert the butterfly whisk into the clean mixing bowl. Add the rinsed rice, rice milk, caster sugar, salt, and optional cinnamon stick and lemon zest to the bowl.
- Cook for 35-40 min / 90°C / Speed 2 / Reverse. Remove the measuring cup and place the simmering basket on the lid to prevent splatter and allow for some evaporation. The pudding should be thick and creamy.
- Pause the machine, carefully remove the simmering basket from the lid, and scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency; if too thin, cook for an additional 5-10 minutes at the same settings.
- Once the desired consistency is reached, remove the butterfly whisk, cinnamon stick, and lemon zest (if used). Add the vanilla extract.
- Stir for 1 min / 90°C / Speed 1 / Reverse to ensure even distribution and prevent sticking.
- Serve warm or chilled, garnished with fresh fruit or a sprinkle of cinnamon if desired.
