Creamy Peanut Tofu with Steamed Vegetables

Ingredients
- 300 g firm or extra-firm tofu, pressed and cubed (approx. 2 cm)
- 150 g broccoli florets
- 1 medium carrot, peeled and sliced into rounds
- 1/2 red bell pepper, deseeded and sliced
- 500 g water (for steaming)
- 2 cloves garlic
- 15 g fresh ginger, peeled
- 80 g smooth peanut butter
- 40 g soy sauce (or tamari for gluten-free)
- 20 g lime juice (approx. 1 lime)
- 15 g maple syrup (or agave nectar)
- 50 g water
- 1/2 tsp chilli flakes (optional, adjust to taste)
- 1 tsp sesame oil (for serving)
- 1 tbsp toasted sesame seeds (for serving)
- 1 spring onion, thinly sliced (for serving)
Instructions
- Press the tofu for at least 15 minutes to remove excess water, then cut into 2 cm cubes. Prepare the broccoli florets, carrot slices, and bell pepper slices.
- Add garlic and ginger to the mixing bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl with the spatula.
- Add peanut butter, soy sauce (or tamari), lime juice, maple syrup, 50 g water, and chilli flakes (if using) to the bowl. Mix 20 sec / Speed 4. Scrape down the sides.
- Transfer the peanut sauce to a separate bowl and set aside. No need to clean the mixing bowl.
- Pour 500 g water into the mixing bowl. Place the simmering basket with the broccoli florets and carrot slices inside the bowl.
- Arrange the tofu cubes and bell pepper slices in the Varoma dish and tray, ensuring some gaps for steam circulation. Place the Varoma onto the mixing bowl.
- Steam the tofu and vegetables 15-20 min / Varoma / Speed 2. Check vegetables for desired tenderness; adjust time if needed.
- Carefully remove the Varoma and simmering basket. Discard the water from the mixing bowl.
- Pour the reserved peanut sauce back into the mixing bowl. Add the steamed tofu and vegetables. Gently mix 2 min / 90°C / Speed 1 (Reverse) to warm the sauce and coat the ingredients evenly.
- Transfer to serving bowls. Drizzle with sesame oil, sprinkle with toasted sesame seeds and sliced spring onion. Serve immediately with rice or noodles if desired.
