Creamy Paprika Soup with Feta

Ingredients
- 1 large red onion (or 2 shallots), peeled
- 4 bell peppers (any color), deseeded and roughly chopped
- 20 g olive oil
- 700 g water, divided
- 2-3 vegetable bouillon cubes (or chicken bouillon if not strictly vegetarian)
- 1 tsp smoked paprika
- Salt, to taste
- Black pepper, to taste
- 100 g feta cheese, crumbled (for serving or mixing in)
Instructions
- Add the peeled onion and deseeded, roughly chopped bell peppers to the mixing bowl.
- Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add 20 g olive oil. Sauté 5 min / 120°C / Speed 1. Remove measuring cup and place simmering basket on lid to prevent splatter and allow some evaporation.
- Add 350 g water, 2-3 bouillon cubes, and 1 tsp smoked paprika to the mixing bowl.
- Cook 12 min / 100°C / Speed 2. Place simmering basket on lid instead of measuring cup for gentle simmering.
- Pause and scrape down the sides and bottom of the mixing bowl. Check consistency.
- Secure the measuring cup. Purée 1 min / Speed 10 until smooth.
- Add the remaining 350 g water. Heat 5 min / 90°C / Speed 2. Place simmering basket on lid instead of measuring cup.
- Taste the soup and adjust seasoning with salt and black pepper as needed.
- For a creamy texture, add 50 g of the crumbled feta to the soup and mix 10 sec / Speed 3 (Reverse).
- Serve hot, garnished with the remaining crumbled feta cheese.
