Creamy Paneer and Vegetable Curry

Ingredients
- 150 g onion, quartered
- 2 cloves garlic
- 2 cm fresh ginger, peeled
- 30 g raw cashews
- 20 g vegetable oil
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp ground coriander
- 1/2 tsp red chili powder (adjust to taste)
- 1/2 tsp garam masala
- 400 g canned chopped tomatoes
- 100 g water or vegetable stock
- 1 tsp salt (adjust to taste)
- 1/2 tsp sugar
- 250 g paneer, cut into 2 cm cubes
- 100 g frozen peas
- 1 red bell pepper, deseeded and diced
- 50 g cooking cream (or plain yogurt)
- Fresh coriander, chopped, for garnish
Instructions
- Place onion, garlic, ginger, and cashews into the mixing bowl. Chop 5 sec / Speed 7. Scrape down the sides of the bowl.
- Add vegetable oil and cumin seeds. Sauté 5 min / 120°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup to allow steam to escape.
- Add turmeric powder, ground coriander, red chili powder, and garam masala. Cook 1 min / 120°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup.
- Add chopped tomatoes, water or vegetable stock, salt, and sugar to the mixing bowl. Cook 15 min / 95°C / Speed 2 (Reverse). Place the simmering basket on the lid instead of the measuring cup.
- Pause and scrape down the sides and bottom of the mixing bowl. Check the consistency; if too thick, add an extra 20-30g of water. Resume cooking if needed for the remaining time.
- Add paneer cubes, frozen peas, and diced red bell pepper to the mixing bowl. Cook 5 min / 90°C / Speed 2 (Reverse). Place the simmering basket on the lid instead of the measuring cup.
- Add cooking cream (or yogurt). Mix 1 min / 90°C / Speed 1 (Reverse) to gently combine and prevent sticking. Do not use the measuring cup.
- Check seasoning and adjust if necessary. Serve hot, garnished with fresh chopped coriander.
