Creamy Mango Rice Pudding

Ingredients
- 300 g ripe mango, peeled and diced
- 900 g full-fat milk
- 180 g short-grain rice (e.g., Arborio or pudding rice)
- 80 g granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Peel and dice 300 g ripe mango. Reserve about 200 g for topping and set aside 100 g for blending into the pudding.
- Add 900 g full-fat milk, 180 g short-grain rice, 80 g granulated sugar, 1 teaspoon vanilla extract, and a pinch of salt to the Thermomix bowl.
- Cook for 30 min / 90°C / Speed 2 / Reverse. Place the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splatter.
- After 20 minutes of cooking, pause the Thermomix. Scrape down the sides and bottom of the bowl with the spatula. Check the consistency; if it seems too thick, add up to 50 g more milk. Resume cooking.
- Cook for a further 10 min / 90°C / Speed 2 / Reverse.
- Add the 100 g reserved diced mango to the bowl. Stir 15 sec / Speed 2 / Reverse to combine.
- Perform a final stir for 1 min / 90°C / Speed 1 / Reverse to ensure even distribution and prevent sticking.
- Pour the rice pudding into individual serving bowls. Top with the remaining 200 g fresh diced mango. Serve warm or chilled.
