Creamy Low-Carb Chicken and Broccoli Bake

  1. Preheat oven to 180°C (fan-forced).
  2. Place chicken breast cubes in a bowl. Add 15 g olive oil, 1 tsp paprika powder, 0.5 tsp garlic powder, 0.5 tsp onion powder, salt, and pepper. Mix well to coat.
  3. Add the seasoned chicken to the Thermomix bowl. Sauté for 8 minutes / 120°C / Speed 1 / Reverse. Transfer the cooked chicken to a large baking dish and set aside. No need to clean the bowl yet.
  4. While the chicken is cooking, cut broccoli into small florets if not already done.
  5. Add 500 g water to the Thermomix bowl (no need to clean after chicken). Place broccoli florets in the Varoma dish. Secure Varoma onto the mixing bowl lid. Steam for 15-20 minutes / Varoma / Speed 2. The exact time depends on desired tenderness and size of florets.
  6. Once steamed, add the broccoli to the baking dish with the chicken. Set aside. Empty and clean the Thermomix bowl.
  7. Add 100 g light cream cheese, 200 g low-fat cottage cheese, 150 g skimmed milk, 50 g vegetable broth, 1 tsp Dijon mustard, 0.5 tsp garlic powder, 0.5 tsp onion powder, salt, and pepper to the clean Thermomix bowl.
  8. Cook the sauce base for 5 minutes / 90°C / Speed 2.
  9. Add 50 g grated low-fat cheese to the bowl. Cook for another 2 minutes / 90°C / Speed 2. If a thicker sauce is desired, add 1 tbsp cornflour mixed with 2 tbsp cold water and cook for 1 minute / 90°C / Speed 2.
  10. Mix for 1 minute / 90°C / Speed 1 / Reverse to ensure everything is well combined and prevent sticking.
  11. Pour the hot sauce over the chicken and broccoli in the baking dish. Gently stir to combine.
  12. Sprinkle 20 g grated low-fat cheese over the top of the bake. Bake for 20-25 minutes, or until bubbly and lightly golden on top.
  13. Let rest for a few minutes before serving.
