Creamy Gorgonzola and Pear Pasta

Ingredients
- 1500 g water
- 10 g salt
- 450 g short pasta (e.g., penne, fusilli)
- 30 g unsalted butter
- 2 medium pears (approx. 300 g), peeled, cored, and diced
- 200 g gorgonzola cheese, crumbled
- 200 g cooking cream (or full-fat milk for a lighter sauce)
- ¼ tsp freshly ground black pepper
- 50 g Parmesan cheese, freshly grated (for serving, optional)
- 50 g walnuts, roughly chopped (for garnish, optional)
Instructions
- Add 1500 g water and 10 g salt to the mixing bowl. Heat 10 min / 100°C / Speed 1.
- Add 450 g short pasta to the mixing bowl. Cook according to package instructions (typically 10-12 min) / 100°C / Reverse / Speed 1. Use the simmering basket to help stir if needed, or ensure pasta is fully submerged.
- Carefully drain the cooked pasta using the simmering basket or a colander. Set aside and keep warm. Empty and clean the mixing bowl.
- Add 30 g unsalted butter to the clean mixing bowl. Melt 2 min / 80°C / Speed 1.
- Add the diced pears to the mixing bowl. Sauté 3 min / 100°C / Reverse / Speed 1.
- Add 200 g crumbled gorgonzola cheese, 200 g cooking cream, and ¼ tsp black pepper to the mixing bowl. Cook 8 min / 90°C / Reverse / Speed 2. Place the simmering basket on the lid instead of the measuring cup to allow for some evaporation and prevent splatter.
- Pause and scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency of the sauce and adjust liquid if needed (add a splash of milk or pasta water if too thick).
- Continue cooking 2 min / 90°C / Reverse / Speed 2 to ensure the sauce is well combined and settled.
- Add the cooked pasta to the mixing bowl with the sauce. Gently mix 30 sec / Reverse / Speed 1 to coat the pasta evenly.
- Serve immediately, garnished with freshly grated Parmesan cheese and chopped walnuts, if desired.
