Creamy Fish Casserole

Ingredients
- 150 g shallots, peeled
- 20 g olive oil
- 150 g leeks, white and light green parts, sliced
- 100 g carrots, peeled and finely diced
- 150 g mushrooms, sliced
- 50 g plain flour
- 500 g milk (dairy or plant-based for dairy-free)
- 200 g fish stock
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- Pinch of nutmeg
- 400 g firm white fish fillets (e.g., cod, haddock), cut into 3-4 cm pieces
- 200 g salmon fillet, skinless, cut into 3-4 cm pieces
- 100 g grated cheese (e.g., Gruyère, Emmental) or breadcrumbs for dairy-free
- 2 tbsp fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 200°C (180°C fan). Lightly grease an oven-safe casserole dish (approx. 1.5-2L capacity).
- Add shallots to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
- Add olive oil. Sauté 3 min / 120°C / Speed 1.
- Add leeks, carrots, and mushrooms to the mixing bowl. Sauté 5 min / 120°C / Speed 1 / Reverse.
- Add flour to the mixing bowl. Cook 2 min / 100°C / Speed 1.
- Add milk, fish stock, Dijon mustard, salt, pepper, and nutmeg to the mixing bowl. Cook 10 min / 98°C / Speed 2.
- Pause the machine. Scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking and prevent sticking. Check the thickness of the sauce; it should be creamy. If too thick, add a splash more milk or stock.
- Add white fish and salmon pieces to the mixing bowl. Cook 5 min / 90°C / Speed 2 / Reverse. The fish should be almost cooked through.
- Transfer the fish and sauce mixture to the prepared casserole dish. Spread evenly.
- Sprinkle the grated cheese or breadcrumbs over the top of the casserole.
- Bake for 20-25 minutes, or until the topping is golden brown and bubbly. If desired, grill for the last 2-3 minutes for extra browning.
- Remove from oven. Let rest for 5 minutes before serving. Garnish with fresh chopped parsley.
