Creamy Fish Casserole

  1. Preheat oven to 200°C (180°C fan). Lightly grease an oven-safe casserole dish (approx. 1.5-2L capacity).
  2. Add shallots to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
  3. Add olive oil. Sauté 3 min / 120°C / Speed 1.
  4. Add leeks, carrots, and mushrooms to the mixing bowl. Sauté 5 min / 120°C / Speed 1 / Reverse.
  5. Add flour to the mixing bowl. Cook 2 min / 100°C / Speed 1.
  6. Add milk, fish stock, Dijon mustard, salt, pepper, and nutmeg to the mixing bowl. Cook 10 min / 98°C / Speed 2.
  7. Pause the machine. Scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking and prevent sticking. Check the thickness of the sauce; it should be creamy. If too thick, add a splash more milk or stock.
  8. Add white fish and salmon pieces to the mixing bowl. Cook 5 min / 90°C / Speed 2 / Reverse. The fish should be almost cooked through.
  9. Transfer the fish and sauce mixture to the prepared casserole dish. Spread evenly.
  10. Sprinkle the grated cheese or breadcrumbs over the top of the casserole.
  11. Bake for 20-25 minutes, or until the topping is golden brown and bubbly. If desired, grill for the last 2-3 minutes for extra browning.
  12. Remove from oven. Let rest for 5 minutes before serving. Garnish with fresh chopped parsley.
