Creamy Endive Soup with Smoked Salmon

Ingredients
- 1 shallot, peeled
- 2 cloves garlic, peeled
- 20 g olive oil
- 1 large potato (approx. 200 g), peeled and diced
- 4 heads endive (approx. 600 g), core removed, roughly chopped
- 1000 g vegetable broth
- 150 g cooking cream
- ¼ tsp ground nutmeg
- 75 g grated aged cheese (e.g., Gouda or Parmesan)
- Salt, to taste
- Black pepper, to taste
- Fresh flat-leaf parsley, chopped, for garnish
- 100 g smoked salmon, thinly sliced, for garnish
Instructions
- Add 1 shallot, peeled, and 2 cloves garlic, peeled, to the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add 20 g olive oil. Sauté 3 min / 120°C / Speed 1.
- Add 1 large potato (approx. 200 g), peeled and diced, and 4 heads endive (approx. 600 g), core removed and roughly chopped, to the mixing bowl.
- Pour in 1000 g vegetable broth. Cook 20 min / 100°C / Speed 1 Reverse. Place the simmering basket on the lid instead of the measuring cup to prevent splatter.
- Pause and scrape down the sides and bottom of the mixing bowl. Check if the potato is tender. If not, cook for another 2-5 minutes at 100°C / Speed 1 Reverse.
- Puree the soup by gradually increasing speed: 1 min / Speed 5-9.
- Add 150 g cooking cream and ¼ tsp ground nutmeg.
- Add 75 g grated aged cheese. Cook 3 min / 90°C / Speed 2 Reverse, until the cheese is melted and well combined.
- Season with salt and black pepper to taste. Cook for 1 min / 90°C / Speed 1 Reverse to settle and prevent sticking.
- Serve hot, garnished with fresh chopped flat-leaf parsley and 100 g thinly sliced smoked salmon.
