Creamy Coconut Broccoli and Sweet Potato Curry

Ingredients
- 1 onion, peeled and quartered
- 2 cloves garlic, peeled
- 2 cm fresh ginger, peeled
- 1 red chilli, deseeded (optional)
- 20 g coconut oil or vegetable oil
- 2 tbsp mild curry powder (or 30g red curry paste)
- 500 g sweet potato, peeled and cut into 2 cm cubes
- 400 ml vegetable stock
- 400 ml full-fat coconut milk
- 300 g broccoli florets
- 1-2 tbsp lime juice, to taste
- ½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
- 50 g cashews, roughly chopped, for garnish
- 1 tsp black sesame seeds, for garnish (optional)
- Cooked rice or quinoa, for serving
Instructions
- Place 1 onion, 2 cloves garlic, 2 cm fresh ginger, and 1 red chilli (if using) into the Thermomix bowl. Chop 5 sec / Speed 7. Scrape down the sides of the bowl with the spatula.
- Add 20 g coconut oil and 2 tbsp mild curry powder (or 30g red curry paste) to the bowl. Sauté 5 min / 120°C / Speed 1.
- Add 500 g sweet potato cubes, 400 ml vegetable stock, and 400 ml full-fat coconut milk to the bowl. Secure the lid and place the simmering basket on top instead of the measuring cup to allow for some evaporation. Cook 15 min / 95°C / Speed 2 Reverse.
- Pause the machine. Carefully remove the simmering basket. Scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check the consistency and add a splash more stock if it seems too thick. Re-secure the simmering basket.
- Add 300 g broccoli florets to the bowl. Continue to cook 5-7 min / 95°C / Speed 2 Reverse, or until the sweet potato is tender and the broccoli is cooked to your liking.
- Stir in 1-2 tbsp lime juice, ½ tsp salt, and ¼ tsp black pepper. Cook 1 min / 90°C / Speed 1 Reverse to combine and settle the curry.
- Ladle the curry into bowls. Garnish with 50 g chopped cashews and 1 tsp black sesame seeds (if using). Serve immediately with cooked rice or quinoa.
