Creamy Chicken Stroganoff

Ingredients
- 600 g boneless, skinless chicken thighs
- 1 tsp garlic powder
- Salt, to taste
- Pepper, to taste
- 1 tbsp olive oil (for external browning)
- 1 large onion
- 300 g mushrooms, sliced
- 40 g butter
- 2 tbsp plain flour
- 500 ml beef broth
- 1 tbsp Dijon mustard
- 150 g sour cream
- Pasta or egg noodles, for serving
- Fresh parsley or chives, chopped (optional, for garnish)
Instructions
- Cut the 600 g boneless, skinless chicken thighs into bite-sized pieces. Season them with 1 tsp garlic powder, salt, and pepper. In a separate frying pan, heat 1 tbsp olive oil over medium-high heat and brown the chicken pieces for 4 minutes per side. Remove the browned chicken from the pan and set aside, reserving any pan juices.
- Add the 1 large onion, quartered, to the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add 40 g butter and 300 g sliced mushrooms to the bowl. Sauté 8 min / 120°C / Speed 1 (Reverse). Remove the measuring cup and place the simmering basket on the lid to prevent splatter and allow some evaporation.
- Add 2 tbsp plain flour to the bowl. Cook 1 min / 100°C / Speed 1 (Reverse) to cook off the raw flour taste and create a roux.
- Pour in 500 ml beef broth. Cook 5 min / 98°C / Speed 2 (Reverse) to thicken the sauce. Remove the measuring cup and place the simmering basket on the lid.
- Add 1 tbsp Dijon mustard and 150 g sour cream to the bowl. Mix 15 sec / Speed 3 (Reverse).
- Add the browned chicken pieces and any reserved pan juices to the bowl. Cook 2 min / 90°C / Speed 1 (Reverse) to heat through and allow the flavors to meld. Ensure the chicken is submerged in the sauce.
- For the last 1 minute, cook 1 min / 90°C / Speed 1 (Reverse) to settle the sauce and prevent sticking.
- Serve the creamy chicken stroganoff immediately over hot pasta or egg noodles, garnished with fresh parsley or chives, if desired.
