Creamy Chestnut Soup

Ingredients
- 150 g onion, quartered
- 1 clove garlic
- 15 g olive oil
- 400 g cooked and peeled chestnuts (Note: Assuming 400g, not 400mg as specified, which is 0.4g and too little for a soup)
- 700 ml vegetable stock
- 100 ml double cream (or plant-based cream for dairy-free option)
- ½ tsp salt, or to taste
- ¼ tsp freshly ground black pepper, or to taste
- Pinch of ground nutmeg
- Fresh chives or parsley, chopped, for garnish (optional)
Instructions
- Place onion and garlic in the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add olive oil. Sauté 5 min / 120°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splatter.
- Add the cooked chestnuts and vegetable stock to the mixing bowl. Cook 15 min / 100°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup.
- Carefully remove the simmering basket. Blend the soup by gradually increasing the speed: start at Speed 5 for 10 sec, then increase to Speed 8 for 30 sec, until smooth. Use caution when blending hot liquids.
- Add double cream, salt, pepper, and nutmeg. Cook 2 min / 90°C / Speed 2 (Reverse) to heat through and combine the flavours.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh chives or parsley if desired.
