Creamy Celeriac Soup

Ingredients
- 1 large celeriac (approx. 600 g), peeled and diced into 2-3 cm cubes
- 1 onion (approx. 120 g), peeled and quartered
- 2 cloves garlic, peeled
- 20 g olive oil
- 750 g vegetable stock
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 100 g cooking cream (single cream or plant-based cream for vegan option)
- Fresh chives or parsley, chopped, for garnish (optional)
Instructions
- Add onion and garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add olive oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1.
- Add the diced celeriac to the mixing bowl. Sauté 3 min / 120°C / Speed 1 (Reverse).
- Pour in the vegetable stock and add salt and pepper. Place the simmering basket on the mixing bowl lid instead of the measuring cup to prevent splatter and allow some evaporation. Cook 20 min / 100°C / Speed 1.
- Pause the machine. Carefully remove the simmering basket. Scrape down the sides and bottom of the mixing bowl with the spatula to ensure all ingredients are submerged and cooking evenly. Replace the simmering basket on the lid. Continue cooking for another 5 min / 100°C / Speed 1.
- Remove the simmering basket. Secure the mixing bowl lid with the measuring cup. Blend the soup, gradually increasing speed, 1 min / Speed 5-9, until completely smooth.
- Add the cooking cream to the soup. Mix 1 min / 90°C / Speed 2 (Reverse) to incorporate and gently warm through.
- Taste and adjust seasoning if necessary. To settle the soup and prevent sticking, mix 1 min / 90°C / Speed 1 (Reverse).
- Serve hot, garnished with fresh chives or parsley if desired.
