Creamed Corn and Chive Biscuits

Ingredients
- 1 can (approx. 300 g) creamed corn
- 60 g light olive oil
- 10 g chives, fresh
- 300 g self-rising flour
- 1.5 g salt
- 60 g dairy-free cheddar, grated (optional)
Instructions
- Preheat oven to 200°C. Line a large baking sheet with parchment paper and lightly oil it. Set aside.
- Place 10 g fresh chives into the clean and dry Thermomix bowl. Chop 3 sec / Speed 7. Scrape down sides of bowl and set aside.
- If using dairy-free cheddar, place 60 g into the clean and dry Thermomix bowl. Grate 5 sec / Speed 7. Set aside with the chives.
- Add 300 g creamed corn, 60 g light olive oil, and 1.5 g salt to the Thermomix bowl. Mix 10 sec / Speed 3.
- Add 300 g self-rising flour, chopped chives, and grated dairy-free cheddar (if using) to the bowl. Mix 20 sec / Speed 4, or until just combined into a thick, sticky batter. Do not overmix.
- Oil your hands generously. Grab a portion of the dough (about 2 tablespoons) and drop it onto the prepared baking sheet. Repeat until all dough is used, leaving about 5 cm space between each biscuit as they will expand.
- Bake for 20-25 minutes at 200°C, or until golden brown and cooked through.
- Let the biscuits cool down for 10-20 minutes at room temperature on a cooling rack before serving.
