  1. In a medium bowl, combine the peeled and deveined shrimp with 2 minced garlic cloves, 15 ml olive oil, a pinch of salt, and a grind of black pepper. Toss to coat and set aside to marinate.
  2. Add the quartered onion, 2 garlic cloves, celery (if using), and red bell pepper (if using) to the clean Thermomix bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
  3. Add 15 g olive oil or butter to the bowl. Sauté 5 min / 120°C / Speed 1.
  4. Add the diced potatoes, vegetable stock, dried thyme, and paprika to the bowl. Secure the simmering basket on the lid instead of the measuring cup to allow for evaporation. Cook 15 min / 95°C / Reverse / Speed 2.
  5. Pause after 7-8 minutes, scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check thickness and adjust liquid if needed.
  6. Add the corn kernels and milk to the bowl. Continue cooking 5 min / 95°C / Reverse / Speed 2, with the simmering basket on the lid.
  7. Stir in the single cream. Season with salt and pepper to taste. Cook 2 min / 90°C / Reverse / Speed 2.
  8. Add the marinated shrimp to the bowl. Cook 3 min / 90°C / Reverse / Speed 1-2, or until the shrimp are just pink and opaque. Do not overcook.
  9. Give a final gentle stir 1 min / 90°C / Reverse / Speed 1 to settle and prevent sticking. Ladle the chowder into bowls and garnish with fresh parsley or chives.
