Clementine Cake with Chocolate Glaze

Ingredients
- 7 seedless clementines (approx. 350-400 g)
- 1000 g water (for boiling clementines)
- 130 g ground almonds
- 120 g potato flour (gluten-free if needed)
- 250 g caster sugar
- 1 tsp baking powder (gluten-free if needed)
- 6 free-range eggs, beaten
- Juice of 2 clementines (approx. 60-80 g)
- 3 tbsp caster sugar (approx. 30 g)
- 100 g dark chocolate, broken into pieces
- 3 tbsp golden syrup (approx. 60 g)
- Edible gold stars, to decorate
Instructions
- Place 7 seedless clementines and 1000 g water into the Thermomix bowl. Cook 30 min / 100°C / Speed 1.
- Carefully drain the clementines using the simmering basket and set aside to cool for 10 minutes. Discard the cooking water.
- Once cooled, place the whole clementines (including peel) into the clean Thermomix bowl. Blend 10 sec / Speed 7 until a chunky purée forms. Scrape down the sides and repeat if necessary. Set aside in a separate bowl.
- Preheat oven to 190°C. Line a 20 cm springform cake tin with baking parchment on the base and sides.
- Add 130 g ground almonds, 120 g potato flour, 250 g caster sugar, and 1 tsp baking powder to the clean Thermomix bowl. Mix 10 sec / Speed 3.
- Add the beaten 6 eggs and the reserved clementine purée to the bowl. Mix 20 sec / Speed 4 until just combined. Scrape down sides and mix again briefly if needed.
- Pour the batter into the prepared cake tin. Bake for 50 minutes in the preheated oven, or until a skewer inserted into the centre comes out clean.
- Leave the cake to cool in the tin for 10 minutes. Meanwhile, squeeze the juice from 2 clementines into a small bowl and stir in 3 tbsp caster sugar until dissolved.
- Using a skewer, make holes all over the surface of the warm cake. Spoon the clementine juice mixture evenly over the cake.
- Place 100 g dark chocolate, broken into pieces, into the clean Thermomix bowl. Melt 5 min / 50°C / Speed 1.
- Add 3 tbsp golden syrup to the melted chocolate. Mix 10 sec / Speed 3 until smooth.
- Carefully turn the cake out onto a wire rack. Spread the chocolate glaze evenly over the top of the cake.
- Allow the glaze to set slightly, then sprinkle with edible gold stars before serving.
