Classic White Sandwich Loaf

Ingredients
- 300 g warm water (approx. 37°C)
- 10 g fresh yeast (or 3.5 g active dry yeast)
- 10 g granulated sugar
- 500 g strong white bread flour
- 10 g fine sea salt
- 20 g olive oil (plus extra for greasing)
Instructions
- Add 300 g warm water, 10 g fresh yeast (or 3.5 g active dry yeast), and 10 g granulated sugar to the Thermomix bowl. Mix 2 min / 37°C / Speed 2 to activate the yeast.
- Add 500 g strong white bread flour and 10 g fine sea salt to the bowl.
- Add 20 g olive oil. Select Dough mode and knead for 3 minutes.
- Transfer the dough to a lightly oiled large bowl. Cover with a damp cloth or plastic wrap and let it rise in a warm place for 60-90 minutes, or until doubled in size (first proof).
- Gently punch down the dough to release air. Transfer it to a lightly floured surface and shape into a loaf. Place the shaped dough into a greased 23 cm x 13 cm (9x5 inch) loaf tin.
- Cover the loaf tin loosely with a damp cloth or plastic wrap and let it rise in a warm place for another 30-45 minutes, or until it has almost doubled in size and looks puffy (second proof).
- While the dough is proofing for the second time, preheat your oven to 200°C (400°F).
- Bake the bread for 30-35 minutes, or until golden brown and hollow-sounding when tapped on the bottom.
- Remove the loaf from the tin immediately and transfer it to a wire rack to cool completely before slicing.
