Classic Vanilla Sponge Cake

Ingredients
- 200 g unsalted butter, softened
- 200 g caster sugar
- 4 large eggs, room temperature
- 200 g self-raising flour (or plain flour + 2 tsp baking powder)
- 2 tsp baking powder (if using plain flour)
- Pinch of salt
- 40 g milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 180°C (160°C fan-forced). Grease and flour a 20-22 cm round cake tin, or line the base and sides with baking paper.
- Insert the butterfly whisk into the clean, dry mixing bowl. Add the softened butter (200 g) and caster sugar (200 g). Cream for 3 minutes / Speed 3.5.
- Pause and scrape down the sides of the mixing bowl with a spatula.
- With the butterfly whisk still in place, add the eggs (4 large), one at a time, through the lid opening, mixing for 30 seconds / Speed 3.5 after each addition. Pause and scrape down the sides after adding all eggs.
- Remove the butterfly whisk. Add the self-raising flour (200 g), baking powder (2 tsp, if using plain flour), salt (pinch), milk (40 g), and vanilla extract (1 tsp) to the mixing bowl.
- Mix for 20 seconds / Speed 3, or until just combined. Be careful not to overmix the batter.
- Pour the batter into the prepared cake tin and gently level the top with a spatula.
- Bake for 30-35 minutes, or until a skewer inserted into the centre of the cake comes out clean.
- Let the cake cool in the tin for 10 minutes before carefully turning it out onto a wire rack to cool completely.
- Serve plain, dusted with icing sugar, or decorated with your favourite frosting.
