Classic Vanilla Cupcakes

Ingredients
- 125 g unsalted butter, softened at room temperature
- 125 g granulated sugar
- 125 g self-raising flour
- 2 tbsp milk, room temperature
- 2 large eggs, room temperature
Instructions
- Preheat your oven to 170°C. Line a 12-hole muffin tin with paper cupcake liners and set aside.
- Ensure your butter, eggs, and milk are at room temperature. Cut the 125 g unsalted butter into small cubes to help with creaming.
- Insert the butterfly whisk into the mixing bowl. Add the 125 g room temperature unsalted butter and 125 g granulated sugar.
- Cream the butter and sugar for 2 min / Speed 3.5. Pause and scrape down the sides of the bowl with the spatula.
- With the butterfly whisk still in place, add the 2 eggs one at a time through the lid opening, mixing for 30 sec / Speed 3.5 after each addition.
- Add the 2 tbsp milk and mix for 15 sec / Speed 3.5. Pause and scrape down the sides of the bowl again.
- Remove the butterfly whisk. Add the 125 g self-raising flour to the mixing bowl. Mix for 20 sec / Speed 3 until just combined. Be careful not to overmix the batter.
- Divide the batter evenly among the 12 prepared cupcake liners using a spoon or ice cream scoop.
- Bake in the preheated oven for 20-25 minutes, or until the cupcakes are golden brown and a skewer inserted into the center comes out clean.
- Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Once cooled, decorate as desired with frosting and sprinkles.
