Classic Tomato Soup

Ingredients
- 1 medium onion, peeled and halved
- 2 cloves garlic, peeled
- 20 g olive oil
- 20 g tomato paste
- 800 g canned chopped tomatoes
- 500 g vegetable stock
- 1 tsp sugar
- 1 tsp salt, or to taste
- 0.5 tsp black pepper, or to taste
- Fresh basil leaves, for garnish (optional)
- 50 g cream or coconut milk (optional, for richness)
Instructions
- Add onion and garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of the bowl.
- Add olive oil. Sauté 5 min / 120°C / Speed 1. Scrape down sides of the bowl.
- Add tomato paste to the bowl. Cook 2 min / 100°C / Speed 1.
- Add canned chopped tomatoes, vegetable stock, sugar, salt, and pepper to the mixing bowl. Place the simmering basket on top of the lid instead of the measuring cup to prevent splatters and allow steam to escape.
- Cook 15 min / 100°C / Speed 1.
- Pause, carefully remove the simmering basket, scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking, and check thickness. Replace simmering basket.
- Cook for a further 3 min / 100°C / Speed 1.
- Carefully remove the simmering basket. Blend the soup by gradually increasing speed: start at Speed 5 for 10 sec, then Speed 7 for 10 sec, then Speed 9 for 30 sec, until smooth. Use the measuring cup to prevent splatters.
- If using, add cream or coconut milk. Mix 1 min / 90°C / Speed 2 (Reverse) to incorporate and settle the soup.
- Serve hot, garnished with fresh basil leaves if desired.
