Classic Spaghetti Carbonara

Ingredients
- 150 g guanciale or pancetta, diced
- 400 g spaghetti
- 1500 g water (for cooking pasta)
- 1 tsp salt (for pasta water)
- 3 large egg yolks
- 1 large whole egg
- 80 g Pecorino Romano cheese, freshly grated, plus extra for serving
- Freshly ground black pepper, to taste
Instructions
- Add the diced guanciale or pancetta to the Thermomix bowl. Cook for 10-12 minutes / 120°C / Speed 1 / Reverse, or until crispy. Remove the cooked guanciale/pancetta from the bowl and set aside, leaving the rendered fat in the bowl.
- Add 1500 g water and 1 tsp salt to the bowl. Heat for 10 minutes / Varoma / Speed 1, or until boiling.
- Carefully add the spaghetti through the lid opening, ensuring it is submerged in the water. Cook according to package directions (typically 8-10 minutes) / 100°C / Speed 1 / Reverse. If the spaghetti is very long, you may need to break it in half or push it down gently with the spatula after a minute or two as it softens.
- While the pasta cooks, in a separate medium bowl, combine the egg yolks, whole egg, 80 g grated Pecorino Romano cheese, and a generous amount of freshly ground black pepper. Whisk vigorously until well combined and slightly pale.
- Once the pasta is cooked, drain it using the simmering basket, reserving 100-150 ml of the pasta cooking water. Immediately transfer the hot, drained spaghetti back into the Thermomix bowl (which still contains the guanciale fat and residual heat).
- Add the cooked guanciale/pancetta and pour the egg mixture over the hot spaghetti. Add 50-100 ml of the reserved pasta water. Mix for 1 minute / Speed 2 / Reverse, without applying any heat. The residual heat from the pasta and bowl will gently cook the eggs into a creamy, emulsified sauce without scrambling.
- Serve immediately, garnished with extra grated Pecorino Romano cheese and freshly ground black pepper.
