Classic South African Bobotie

Ingredients
- 2 slices white bread
- 220 g milk (divided)
- 1 medium onion (approx. 150g), quartered
- 2 cloves garlic
- 10 g fresh ginger, peeled
- 20 g olive oil
- 500 g minced beef
- 2 tsp curry powder
- 1 tsp ground turmeric (divided)
- 0.75 tsp salt (divided)
- 0.25 tsp black pepper
- 3 bay leaves (2 for meat, 1 for topping)
- 2 tbsp apricot jam
- 2 tbsp fruit chutney
- 1 tbsp white vinegar
- 2 large eggs
- 2 tbsp flaked almonds
Instructions
- Preheat your oven to 180°C (350°F). Lightly grease a medium baking dish (approx. 20x25 cm).
- Place the 2 slices of white bread in a small bowl and pour 120 g milk over them. Let soak for 5-10 minutes. Gently squeeze out the excess milk from the bread and reserve this milk for the topping. Set the squeezed bread aside.
- Add the quartered onion, garlic cloves, and peeled fresh ginger to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add 20 g olive oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1.
- Add 500 g minced beef to the mixing bowl. Cook 8 min / 120°C / Reverse / Speed 1, using the spatula to break up the meat if necessary. (Note: Thermomix browning is gentler than stovetop; for deeper browning, you can pre-fry the meat in a pan).
- Add 2 tsp curry powder, 0.5 tsp ground turmeric, 0.5 tsp salt, 0.25 tsp black pepper, 2 bay leaves, 2 tbsp apricot jam, 2 tbsp fruit chutney, and 1 tbsp white vinegar to the bowl. Cook 3 min / 90°C / Reverse / Speed 1 to combine the flavours.
- Add the squeezed bread to the mixing bowl. Mix 30 sec / Reverse / Speed 2 to thoroughly incorporate it into the meat mixture.
- Transfer the meat mixture into the prepared baking dish, spreading it evenly. You can remove the 2 bay leaves from the mixture now, or leave them in.
- Clean and dry the mixing bowl. Insert the butterfly whisk. Add the 2 large eggs, the reserved 100 g milk (from soaking the bread), 0.5 tsp ground turmeric, and 0.25 tsp salt to the bowl. Whisk 20 sec / Speed 3.
- Carefully pour the whisked egg mixture over the meat in the baking dish. Arrange the remaining 1 fresh bay leaf on top and sprinkle with 2 tbsp flaked almonds.
- Bake in the preheated oven for 25-30 minutes, or until the topping is set and golden brown.
- Remove from the oven and let rest for 5 minutes before serving. Serve hot, traditionally with yellow rice and extra chutney.
