Classic Salami Pizza

Ingredients
- 250 g water
- 10 g fresh yeast
- 5 g sugar
- 400 g strong bread flour
- 5 g salt
- 20 g olive oil, plus extra for greasing
- 1 small onion, peeled
- 1 clove garlic, peeled
- 20 g olive oil
- 400 g canned crushed tomatoes
- 5 g dried oregano
- Salt, to taste
- Black pepper, to taste
- 200 g mozzarella cheese, grated or torn
- 100 g salami, thinly sliced
- Fresh basil leaves, for garnish (optional)
Instructions
- Add water, fresh yeast, and sugar to the Thermomix bowl. Warm 2 min / 37°C / Speed 1.
- Add strong bread flour, salt, and 20 g olive oil to the bowl. Knead 2 min / Dough mode.
- Remove the dough from the bowl, form into a ball, and place in a lightly oiled bowl. Cover with a clean cloth or plastic wrap and let rise in a warm place for 45-60 minutes, or until doubled in size. Clean the Thermomix bowl.
- Add onion and garlic to the clean Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add 20 g olive oil to the bowl. Sauté 5 min / 120°C / Speed 1.
- Add crushed tomatoes, dried oregano, salt, and pepper to the bowl. Cook 10 min / 98°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splatter.
- Preheat your oven to 220°C (425°F). Lightly grease two large baking trays or line with baking paper.
- Once the dough has risen, punch it down gently and divide it into two equal portions. On a lightly floured surface, roll out each portion into a round pizza base, about 30 cm (12 inches) in diameter. Transfer to the prepared baking trays.
- Spread half of the tomato sauce evenly over each pizza base, leaving a small border for the crust.
- Top each pizza with half of the grated mozzarella cheese and half of the sliced salami.
- Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and melted.
- Remove from the oven, garnish with fresh basil leaves if desired, slice, and serve immediately.
