Classic Pork Tortellini in Broth

Ingredients
- 1 small onion, peeled and halved
- 1 carrot, peeled and cut into 2-3 pieces
- 1 celery stalk, cut into 2-3 pieces
- 20 g olive oil
- 1000 g water (or 500g water + 500g good quality chicken or vegetable stock)
- 1-2 chicken or vegetable bouillon cubes (if not using liquid stock)
- 1/2 tsp salt (adjust to taste)
- Pinch of black pepper
- 500 g fresh pork tortellini (store-bought)
- Freshly grated Parmesan cheese, for serving
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Place 1 small onion, 1 carrot, and 1 celery stalk into the Thermomix bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add 20 g olive oil. Sauté 5 min / 120°C / Speed 1.
- Add 1000 g water (or 500g water + 500g good quality stock), 1-2 bouillon cubes (if using), 1/2 tsp salt, and a pinch of black pepper to the bowl.
- Secure the lid and place the simmering basket on top instead of the measuring cup to allow for evaporation. Cook 20 min / 100°C / Speed 1.
- Pause the Thermomix. Carefully remove the simmering basket from the lid. Insert the simmering basket into the Thermomix bowl. Add 500 g fresh pork tortellini into the simmering basket.
- Cook 8-12 min / 100°C / Speed 1, or according to package instructions, until tortellini are al dente. The exact time will depend on the tortellini size and freshness.
- Carefully remove the simmering basket with the cooked tortellini. Pour the hot broth into individual serving bowls.
- Divide the tortellini among the bowls. Serve immediately, garnished with freshly grated Parmesan cheese and chopped fresh parsley, if desired.
