Classic Nut Cake

  1. Preheat oven to 180°C (350°F). Grease and flour a 20 cm (8-inch) round springform cake tin or line with baking paper.
  2. Add the mixed nuts to the clean, dry mixing bowl. Chop 5 sec / Speed 7. Transfer the chopped nuts to a separate bowl and set aside.
  3. Insert the butterfly whisk. Add the softened butter and caster sugar to the mixing bowl. Cream 3 min / Speed 3.5. Scrape down the sides of the bowl.
  4. With the butterfly whisk still in place, add the eggs one by one through the lid opening, waiting approximately 30 seconds between each addition. Mix 2 min / Speed 3.5.
  5. Remove the butterfly whisk. Add the plain flour, baking powder, salt, milk (if using), and vanilla extract (if using) to the mixing bowl. Mix 20 sec / Speed 4. Scrape down the sides of the bowl.
  6. Add the reserved chopped nuts to the mixing bowl. Mix 10 sec / Speed 3 (Reverse) to gently incorporate them, or use a spatula to fold them in by hand.
  7. Pour the batter into the prepared cake tin. Smooth the top with a spatula.
  8. Bake for 45-55 minutes, or until a skewer inserted into the center of the cake comes out clean.
  9. Let the cake cool in the tin for 10 minutes before carefully transferring it to a wire rack to cool completely.
  10. Dust with icing sugar before serving, if desired.
