Classic Nut Cake

Ingredients
- 200 g mixed nuts (e.g., walnuts, hazelnuts, almonds)
- 200 g unsalted butter, softened, cut into pieces
- 200 g caster sugar
- 4 large eggs
- 200 g plain flour
- 2 tsp baking powder
- Pinch of salt
- 50 g milk (optional)
- 1 tsp vanilla extract (optional)
- Icing sugar, for dusting (optional)
Instructions
- Preheat oven to 180°C (350°F). Grease and flour a 20 cm (8-inch) round springform cake tin or line with baking paper.
- Add the mixed nuts to the clean, dry mixing bowl. Chop 5 sec / Speed 7. Transfer the chopped nuts to a separate bowl and set aside.
- Insert the butterfly whisk. Add the softened butter and caster sugar to the mixing bowl. Cream 3 min / Speed 3.5. Scrape down the sides of the bowl.
- With the butterfly whisk still in place, add the eggs one by one through the lid opening, waiting approximately 30 seconds between each addition. Mix 2 min / Speed 3.5.
- Remove the butterfly whisk. Add the plain flour, baking powder, salt, milk (if using), and vanilla extract (if using) to the mixing bowl. Mix 20 sec / Speed 4. Scrape down the sides of the bowl.
- Add the reserved chopped nuts to the mixing bowl. Mix 10 sec / Speed 3 (Reverse) to gently incorporate them, or use a spatula to fold them in by hand.
- Pour the batter into the prepared cake tin. Smooth the top with a spatula.
- Bake for 45-55 minutes, or until a skewer inserted into the center of the cake comes out clean.
- Let the cake cool in the tin for 10 minutes before carefully transferring it to a wire rack to cool completely.
- Dust with icing sugar before serving, if desired.
