Classic Nut Cake

Ingredients
- 200 g mixed nuts (e.g., hazelnuts, walnuts, almonds)
- 200 g unsalted butter, softened, cut into pieces
- 180 g caster sugar
- 4 large eggs
- 1 tsp vanilla extract
- 250 g plain flour
- 2 tsp baking powder
- Pinch of salt
- 100 ml milk
- Icing sugar, for dusting (optional)
Instructions
- Preheat oven to 180°C (350°F). Grease and flour a 22-24 cm round springform cake tin or a loaf tin.
- Place 200 g mixed nuts into a clean, dry Thermomix bowl. Grind 10 sec / Speed 10. Transfer to a separate bowl and set aside.
- Insert the butterfly whisk. Add 200 g softened butter and 180 g caster sugar to the Thermomix bowl. Cream 2 min / Speed 3.5.
- Add 4 large eggs and 1 tsp vanilla extract. Mix 30 sec / Speed 3.5.
- Remove the butterfly whisk. Add 250 g plain flour, 2 tsp baking powder, a pinch of salt, the ground nuts, and 100 ml milk to the bowl.
- Mix 20 sec / Speed 4, or until just combined. Scrape down the sides of the bowl with the spatula and mix again 5 sec / Speed 4 if needed. Do not overmix.
- Pour the batter into the prepared cake tin and smooth the top.
- Bake for 45-55 minutes, or until a wooden skewer inserted into the centre comes out clean. Baking time may vary depending on your oven and tin size.
- Remove the cake from the oven and let it cool in the tin for 10-15 minutes before transferring it to a wire rack to cool completely.
- Once cooled, dust with icing sugar, if desired, before serving.
