Classic Nut Cake

  1. Preheat oven to 180°C (350°F). Grease and flour a 22-24 cm round springform cake tin or a loaf tin.
  2. Place 200 g mixed nuts into a clean, dry Thermomix bowl. Grind 10 sec / Speed 10. Transfer to a separate bowl and set aside.
  3. Insert the butterfly whisk. Add 200 g softened butter and 180 g caster sugar to the Thermomix bowl. Cream 2 min / Speed 3.5.
  4. Add 4 large eggs and 1 tsp vanilla extract. Mix 30 sec / Speed 3.5.
  5. Remove the butterfly whisk. Add 250 g plain flour, 2 tsp baking powder, a pinch of salt, the ground nuts, and 100 ml milk to the bowl.
  6. Mix 20 sec / Speed 4, or until just combined. Scrape down the sides of the bowl with the spatula and mix again 5 sec / Speed 4 if needed. Do not overmix.
  7. Pour the batter into the prepared cake tin and smooth the top.
  8. Bake for 45-55 minutes, or until a wooden skewer inserted into the centre comes out clean. Baking time may vary depending on your oven and tin size.
  9. Remove the cake from the oven and let it cool in the tin for 10-15 minutes before transferring it to a wire rack to cool completely.
  10. Once cooled, dust with icing sugar, if desired, before serving.
