Classic Melt-in-Your-Mouth Shortbread Cookies

Ingredients
- 200 g unsalted butter, softened, cut into cubes
- 100 g caster sugar (or granulated sugar)
- 300 g plain flour
- Pinch of salt
- 1 tsp vanilla extract (optional)
Instructions
- Preheat your oven to 160°C. Line two large baking trays with parchment paper.
- Add 100 g caster sugar to the clean, dry Thermomix bowl. If using granulated sugar, mill 10 sec / Speed 10. Scrape down the sides of the bowl.
- Add 200 g softened unsalted butter, 1 tsp vanilla extract (if using), and a pinch of salt to the bowl. Cream 30 sec / Speed 4. Scrape down the sides of the bowl.
- Add 300 g plain flour to the bowl. Mix 30 sec / Speed 4, or until a soft dough forms. Avoid overmixing.
- Gather the dough from the bowl, form it into a ball, and wrap it in cling film. Chill the dough in the refrigerator for 15 minutes.
- On a lightly floured surface, roll out the chilled dough to about 5 mm thickness. Use a cookie cutter to cut out desired shapes (e.g., rounds, fingers). Alternatively, you can press the dough into a round cake tin, prick with a fork, and cut into wedges after baking.
- Carefully place the cut cookies onto the prepared baking trays. For a classic shortbread look, prick each cookie a few times with a fork.
- Bake for 12-15 minutes, or until the edges are pale golden. The center of the cookies should remain pale.
- Remove the baking trays from the oven and let the cookies cool on the trays for 5 minutes before gently transferring them to a wire rack to cool completely.
- Once fully cooled, store the shortbread cookies in an airtight container at room temperature.
