Classic Italian Pork Tortellini Filling

Ingredients
- 50 g Parmesan cheese, cut into pieces
- 300 g pork loin or shoulder, cut into 3-4 cm cubes
- 20 g olive oil
- 50 g dry white wine
- 100 g prosciutto, roughly chopped
- 100 g mortadella, roughly chopped
- 1 large egg
- 1/4 tsp freshly grated nutmeg
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Place Parmesan cheese into the clean and dry mixing bowl. Grate 10 sec / Speed 10. Transfer to a small bowl and set aside.
- Add pork cubes and olive oil to the mixing bowl. Sauté 10 min / 120°C / Speed 1. Scrape down the sides of the bowl with the spatula.
- Add white wine to the mixing bowl. Cook 10 min / 100°C / Speed 1, removing the measuring cup and placing the simmering basket on the lid to allow evaporation.
- Transfer the cooked pork to a separate bowl to cool slightly for 10-15 minutes.
- Add the cooled pork, prosciutto, and mortadella to the mixing bowl. Process 10-15 sec / Speed 7, or until a finely ground mixture is achieved. Scrape down the sides of the bowl.
- Add the grated Parmesan, egg, nutmeg, salt, and black pepper to the mixing bowl. Mix 20 sec / Speed 4 / Reverse.
- Transfer the filling to a bowl, cover, and refrigerate for at least 30 minutes before using to fill tortellini. This allows the flavours to meld and the filling to firm up, making it easier to work with.
