Classic Chocolate Chip Muffins

Ingredients
- 250 g plain flour
- 150 g caster sugar
- 30 g cocoa powder
- 10 g baking powder
- 2 g bicarbonate of soda
- 2 g salt
- 2 large eggs
- 240 ml milk
- 80 ml vegetable oil (or melted butter)
- 5 ml vanilla extract
- 150 g chocolate chips
Instructions
- Preheat your oven to 190°C (170°C fan-forced). Line a 12-hole muffin tin with paper cases.
- Add the plain flour, caster sugar, cocoa powder, baking powder, bicarbonate of soda, and salt to the Thermomix bowl. Mix 10 sec / Speed 3. Transfer the dry ingredients to a separate bowl and set aside.
- Without cleaning the bowl, add the eggs, milk, vegetable oil, and vanilla extract to the Thermomix bowl. Mix 15 sec / Speed 4 until well combined.
- Add the reserved dry ingredients back into the Thermomix bowl with the wet ingredients. Mix 10 sec / Speed 3, or until just combined. Do not overmix; a few lumps are fine.
- Add the chocolate chips to the bowl. Mix 5 sec / Speed 2 / Reverse to gently incorporate, or fold in with a spatula.
- Divide the batter evenly among the 12 prepared muffin cases. Fill each case about two-thirds full.
- Bake for 18-22 minutes, or until a skewer inserted into the centre of a muffin comes out clean. The tops should be golden brown and springy to the touch.
- Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
