  1. Preheat your oven to 190°C (170°C fan-forced). Line a 12-hole muffin tin with paper cases.
  2. Add the plain flour, caster sugar, cocoa powder, baking powder, bicarbonate of soda, and salt to the Thermomix bowl. Mix 10 sec / Speed 3. Transfer the dry ingredients to a separate bowl and set aside.
  3. Without cleaning the bowl, add the eggs, milk, vegetable oil, and vanilla extract to the Thermomix bowl. Mix 15 sec / Speed 4 until well combined.
  4. Add the reserved dry ingredients back into the Thermomix bowl with the wet ingredients. Mix 10 sec / Speed 3, or until just combined. Do not overmix; a few lumps are fine.
  5. Add the chocolate chips to the bowl. Mix 5 sec / Speed 2 / Reverse to gently incorporate, or fold in with a spatula.
  6. Divide the batter evenly among the 12 prepared muffin cases. Fill each case about two-thirds full.
  7. Bake for 18-22 minutes, or until a skewer inserted into the centre of a muffin comes out clean. The tops should be golden brown and springy to the touch.
  8. Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
