Classic Chocolate Chip Cookies

Ingredients
- 360 g unsalted butter, softened
- 300 g light brown sugar
- 200 g granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 600 g all-purpose flour
- 2 tsp baking soda
- 1 tsp salt
- 500 g chocolate chips (milk, dark, or a mix)
Instructions
- Preheat your oven to 180°C (350°F). Line several baking sheets with parchment paper and set aside.
- Divide the ingredients into two equal batches for mixing in the Thermomix bowl, as the total quantity exceeds the safe capacity for thick dough. Each batch will yield approximately 30 cookies.
- For the first batch, add 180 g softened unsalted butter, 150 g light brown sugar, and 100 g granulated sugar to the clean and dry Thermomix bowl. Mix for 30 seconds / Speed 4.
- Scrape down the sides and bottom of the bowl with the spatula. Mix again for 15 seconds / Speed 4, or until light and creamy.
- Add 2 large eggs and 1 tsp vanilla extract to the bowl. Mix for 15 seconds / Speed 3.
- Add 300 g all-purpose flour, 1 tsp baking soda, and ½ tsp salt to the bowl. Mix for 20 seconds / Speed 3. Pause, scrape down the sides, and mix for another 10 seconds / Speed 3 if needed, until just combined.
- Add 250 g chocolate chips to the bowl. Mix for 10 seconds / Reverse / Speed 2 to incorporate without breaking the chips.
- Remove the dough from the bowl and set aside. Clean the Thermomix bowl.
- Repeat steps 3-7 with the remaining half of the ingredients to prepare the second batch of dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie. You can also use a cookie scoop for uniform size.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft. Baking time may vary depending on your oven.
- Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Serve warm or at room temperature.
