Classic Beef Tacos

Ingredients
- 500 g ground beef (at least 80% lean)
- 160 ml water
- 28 g taco seasoning mix
- 10 taco shells
- 125 g shredded cheddar cheese
- 120 g shredded lettuce
- 150 g diced tomato
- 240 g sour cream
Instructions
- Place the ground beef into the Thermomix mixing bowl.
- Cook the beef for 10 minutes / 120°C / Speed 1 / Reverse. This will brown the beef and render some fat.
- Carefully transfer the cooked beef into the simmering basket. Press down with the spatula to drain any excess fat into a heatproof bowl. Discard the fat.
- Return the drained beef to the mixing bowl.
- Add 160 ml water and 28 g taco seasoning mix to the bowl with the beef.
- Cook for 5 minutes / 95°C / Speed 1 / Reverse, with the simmering basket placed on the lid instead of the measuring cup to allow for evaporation and thickening. For the last 1-2 minutes, reduce temperature to 90°C / Speed 1 / Reverse to settle and prevent sticking, checking consistency and adjusting liquid if needed.
- Meanwhile, heat the taco shells according to package directions.
- Divide the seasoned beef mixture among the heated taco shells.
- Top each taco with 125 g shredded cheddar cheese, 120 g shredded lettuce, 150 g diced tomato, and 240 g sour cream, or your preferred toppings. Serve immediately.
