Classic Beef Lasagne

Ingredients
- 100 g Parmesan cheese, in pieces
- 1 onion, quartered
- 1 carrot, roughly chopped
- 1 celery stalk, roughly chopped
- 20 g olive oil
- 500 g beef mince
- 20 g tomato paste
- 400 g canned crushed tomatoes
- 100 g beef stock
- 1 tsp dried oregano
- 1/2 tsp salt (for Bolognese)
- 1/4 tsp black pepper (for Bolognese)
- 50 g butter
- 50 g plain flour
- 500 g milk
- 1/2 tsp salt (for Béchamel)
- Pinch of black pepper (for Béchamel)
- Pinch of nutmeg
- 9-12 dried lasagne sheets (no-boil)
- 50 g mozzarella cheese, grated (optional)
Instructions
- Preheat oven to 180°C (350°F).
- Add Parmesan cheese to the clean, dry mixing bowl. Grate 10 sec / Speed 10. Transfer to a separate bowl and set aside.
- Add onion, carrot, and celery to the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of bowl.
- Add olive oil. Sauté 5 min / 120°C / Speed 1. Scrape down sides of bowl.
- Add beef mince. Cook 10 min / 120°C / Reverse / Speed 1, ensuring mince is broken up with the spatula through the lid opening during the first minute. Scrape down sides of bowl.
- Add tomato paste, crushed tomatoes, beef stock, oregano, 1/2 tsp salt, and 1/4 tsp pepper. Place the simmering basket on the mixing bowl lid instead of the measuring cup to allow steam to escape and prevent splatter. Cook 30 min / 98°C / Reverse / Speed 1.
- Pause, scrape down sides and bottom of the bowl, check thickness, and adjust liquid if needed. Continue cooking for the remaining time. At the end, stir 1 min / 90°C / Reverse / Speed 1 to settle and prevent sticking. Transfer Bolognese sauce to a bowl and set aside. Clean the mixing bowl.
- Add butter to the clean mixing bowl. Melt 2 min / 90°C / Speed 2.
- Add flour. Cook 1 min / 90°C / Speed 2 to create a roux.
- Add milk, 1/2 tsp salt, pinch of pepper, and pinch of nutmeg. Cook 8 min / 90°C / Speed 3, or until thickened. At the end, stir 1 min / 90°C / Speed 2 to settle and prevent sticking. Transfer Béchamel sauce to a bowl and set aside.
- To assemble the lasagne, spread a thin layer of Bolognese sauce on the bottom of a 20x20 cm (8x8 inch) baking dish.
- Arrange a layer of lasagne sheets over the sauce. Top with a layer of Bolognese, then a layer of Béchamel, and sprinkle with some grated Parmesan cheese.
- Repeat the layers: lasagne sheets, Bolognese, Béchamel, Parmesan, until all ingredients are used, finishing with a layer of Béchamel and a generous sprinkle of Parmesan and optional mozzarella cheese.
- Bake for 30 minutes, or until golden brown and bubbling. If the top browns too quickly, cover loosely with foil.
- Remove from oven and let rest for 10-15 minutes before serving to allow the layers to set.
