Classic Beef Lasagne

  1. Preheat oven to 180°C (350°F).
  2. Add Parmesan cheese to the clean, dry mixing bowl. Grate 10 sec / Speed 10. Transfer to a separate bowl and set aside.
  3. Add onion, carrot, and celery to the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of bowl.
  4. Add olive oil. Sauté 5 min / 120°C / Speed 1. Scrape down sides of bowl.
  5. Add beef mince. Cook 10 min / 120°C / Reverse / Speed 1, ensuring mince is broken up with the spatula through the lid opening during the first minute. Scrape down sides of bowl.
  6. Add tomato paste, crushed tomatoes, beef stock, oregano, 1/2 tsp salt, and 1/4 tsp pepper. Place the simmering basket on the mixing bowl lid instead of the measuring cup to allow steam to escape and prevent splatter. Cook 30 min / 98°C / Reverse / Speed 1.
  7. Pause, scrape down sides and bottom of the bowl, check thickness, and adjust liquid if needed. Continue cooking for the remaining time. At the end, stir 1 min / 90°C / Reverse / Speed 1 to settle and prevent sticking. Transfer Bolognese sauce to a bowl and set aside. Clean the mixing bowl.
  8. Add butter to the clean mixing bowl. Melt 2 min / 90°C / Speed 2.
  9. Add flour. Cook 1 min / 90°C / Speed 2 to create a roux.
  10. Add milk, 1/2 tsp salt, pinch of pepper, and pinch of nutmeg. Cook 8 min / 90°C / Speed 3, or until thickened. At the end, stir 1 min / 90°C / Speed 2 to settle and prevent sticking. Transfer Béchamel sauce to a bowl and set aside.
  11. To assemble the lasagne, spread a thin layer of Bolognese sauce on the bottom of a 20x20 cm (8x8 inch) baking dish.
  12. Arrange a layer of lasagne sheets over the sauce. Top with a layer of Bolognese, then a layer of Béchamel, and sprinkle with some grated Parmesan cheese.
  13. Repeat the layers: lasagne sheets, Bolognese, Béchamel, Parmesan, until all ingredients are used, finishing with a layer of Béchamel and a generous sprinkle of Parmesan and optional mozzarella cheese.
  14. Bake for 30 minutes, or until golden brown and bubbling. If the top browns too quickly, cover loosely with foil.
  15. Remove from oven and let rest for 10-15 minutes before serving to allow the layers to set.
