Classic BBQ Spareribs Marinade

Ingredients
- 3 cloves garlic
- 20 g fresh ginger, peeled
- 60 g soy sauce
- 50 g honey or maple syrup
- 30 g brown sugar
- 100 g ketchup
- 30 g apple cider vinegar
- 1 tbsp smoked paprika
- 1 tsp black pepper
- 1 tbsp Dijon mustard
- 50 g water
- 1/2 tsp chili flakes (optional)
Instructions
- Place garlic and ginger into the mixing bowl. Chop 3 sec / Speed 7. Scrape down sides of the bowl with the spatula.
- Add soy sauce, honey or maple syrup, brown sugar, ketchup, apple cider vinegar, smoked paprika, black pepper, Dijon mustard, water, and chili flakes (if using) to the mixing bowl.
- Mix 20 sec / Speed 4 until all ingredients are well combined and the marinade is smooth.
- Pour the prepared marinade over 1-1.5 kg of spareribs in a large non-metallic dish or a resealable bag. Ensure all ribs are thoroughly coated.
- Marinate the spareribs in the refrigerator for at least 4 hours, or preferably overnight, turning occasionally to ensure even flavour distribution.
- Cook the spareribs according to your preferred method (e.g., bake in an oven at 150°C for 2-3 hours until tender, then grill or broil for 10-15 minutes to caramelize; or grill directly over medium heat until cooked through and tender).
