Classic Banana Bread

Ingredients
- 2 very ripe bananas (approx. 200-250 g), peeled
- 100 g unsalted butter, softened, cut into pieces
- 100 g caster sugar
- 1 large egg
- 1 tsp vanilla extract
- 150 g plain flour
- 1 tsp baking soda
- 1/4 tsp salt
- 50 g chopped walnuts or chocolate chips (optional)
Instructions
- Preheat oven to 175°C. Lightly grease and flour a small loaf tin (approx. 18x9 cm).
- Add the peeled bananas to the Thermomix bowl. Mash 5 sec / Speed 4. Scrape down the sides of the bowl with a spatula and set the mashed bananas aside.
- Without cleaning the bowl, add the softened butter and caster sugar. Cream 30 sec / Speed 4. Scrape down the sides of the bowl.
- Add the egg and vanilla extract to the bowl. Mix 15 sec / Speed 3. Scrape down the sides of the bowl.
- Add the plain flour, baking soda, and salt to the bowl. Mix 10 sec / Speed 4 until just combined. Be careful not to overmix.
- Add the reserved mashed bananas back into the bowl. If using, add the 50 g chopped walnuts or chocolate chips. Mix 5 sec / Speed 3 (Reverse) until just incorporated.
- Pour the batter into the prepared loaf tin, spreading it evenly.
- Bake for 45-55 minutes, or until a wooden skewer inserted into the center of the bread comes out clean.
- Let the banana bread cool in the tin for 10 minutes before carefully transferring it to a wire rack to cool completely.
- Slice and serve.
