Classic Banana Bread

Ingredients
- 110 g plain flour
- ½ tsp baking soda
- ¼ tsp salt
- 50 g unsalted butter, softened, cut into cubes
- 70 g light brown sugar
- 1 large egg
- ½ tsp vanilla extract
- 120 g very ripe bananas, peeled (about 1-2 medium)
- 30 g walnuts, roughly chopped (optional)
Instructions
- Preheat oven to 175°C. Grease and flour a small loaf pan (approx. 18x9 cm) or line with baking paper. Set aside.
- If using walnuts, add 30 g walnuts to the clean, dry mixing bowl. Chop 3 sec / Speed 5. Transfer to a small bowl and set aside.
- Add 110 g plain flour, ½ tsp baking soda, and ¼ tsp salt to the mixing bowl. Mix 5 sec / Speed 3. Transfer to a separate bowl and set aside.
- Insert the butterfly whisk. Add 50 g softened butter and 70 g light brown sugar to the mixing bowl. Cream 1 min 30 sec / Speed 3.5.
- Add 1 large egg and ½ tsp vanilla extract. Mix 30 sec / Speed 3.5.
- Add 120 g peeled ripe bananas to the mixing bowl. Mix 15 sec / Speed 4, or until mostly mashed. Scrape down the sides of the bowl with a spatula.
- Remove the butterfly whisk. Add the reserved dry ingredients (flour mixture) to the mixing bowl. Mix 10 sec / Speed 3, or until just combined. Do not overmix.
- Add the reserved chopped walnuts (if using) to the bowl. Gently fold in with a spatula until evenly distributed.
- Pour the batter into the prepared loaf pan. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, you can loosely tent it with foil.
- Remove the loaf from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing and serving.
