  1. Preheat your oven to 180°C (fan-forced) or 200°C (conventional). Grease and line a loaf pan with baking paper, then set aside.
  2. For the topping, in a small bowl, combine the 1.5 tbsp demerara sugar and 0.25 cup brown sugar. Mix well and set aside. Slice the 1 Granny Smith apple thinly (3mm) just before assembling the bread to prevent browning.
  3. Add the 300 g quartered Granny Smith apples to the Thermomix bowl. Chop 3 sec / Speed 4.5. Transfer the chopped apples to a separate bowl, add 1 tsp cinnamon powder and 3 tbsp brown sugar, mix to combine, and set aside.
  4. Add the 150 g brown sugar, 185 g plain yogurt or sour cream, 2 eggs, 125 g canola oil, and 1 tsp vanilla extract to the clean Thermomix bowl. Mix 10 sec / Speed 4. Scrape down the sides of the mixing bowl with a spatula.
  5. Add the 1 tsp cinnamon powder, 0.5 tsp ginger powder, 0.25 tsp allspice, 265 g plain flour, 1 tsp baking powder, 0.5 tsp baking soda, and 0.25 tsp salt to the Thermomix bowl. Mix 10 sec / Speed 4. Scrape down the sides of the mixing bowl and repeat Mix 10 sec / Speed 4.
  6. Transfer the batter to a large mixing bowl. Add the reserved chopped apples with their juice, and the optional 120 g toasted and chopped walnuts. Gently fold them into the batter with a spatula until just combined. Do not overmix.
  7. Pour the batter into the prepared loaf pan and smooth the surface.
  8. Arrange the thinly sliced apple pieces on top of the batter, fanning them out and overlapping to cover the surface. Sprinkle the reserved cinnamon sugar mix evenly over the apples.
  9. Bake for 45 minutes in the preheated oven. Then, loosely cover the loaf with foil and bake for a further 15 minutes, or until a skewer inserted into the center comes out clean.
  10. Remove the bread from the oven and let it rest in the tin for 15 minutes. Then, carefully remove it from the pan and place it on a wire rack to cool for at least 1 hour before slicing and serving.
