Cinnamon Apple Bread

Ingredients
- 1 Granny Smith apple (for topping, cored, quartered, thinly sliced 3mm)
- 1.5 tbsp demerara sugar
- 0.25 cup brown sugar (for topping)
- 300 g Granny Smith apples (approx. 2 large, cored, quartered)
- 1 tsp cinnamon powder (for apple filling)
- 3 tbsp brown sugar (for apple filling)
- 1 tsp cinnamon powder (for batter)
- 0.5 tsp ginger powder
- 0.25 tsp allspice
- 265 g plain flour
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.25 tsp salt
- 150 g brown sugar (for batter)
- 185 g plain yogurt or sour cream
- 2 eggs
- 125 g canola oil or vegetable oil
- 1 tsp vanilla extract
- 120 g walnuts (optional, toasted & chopped)
Instructions
- Preheat your oven to 180°C (fan-forced) or 200°C (conventional). Grease and line a loaf pan with baking paper, then set aside.
- For the topping, in a small bowl, combine the 1.5 tbsp demerara sugar and 0.25 cup brown sugar. Mix well and set aside. Slice the 1 Granny Smith apple thinly (3mm) just before assembling the bread to prevent browning.
- Add the 300 g quartered Granny Smith apples to the Thermomix bowl. Chop 3 sec / Speed 4.5. Transfer the chopped apples to a separate bowl, add 1 tsp cinnamon powder and 3 tbsp brown sugar, mix to combine, and set aside.
- Add the 150 g brown sugar, 185 g plain yogurt or sour cream, 2 eggs, 125 g canola oil, and 1 tsp vanilla extract to the clean Thermomix bowl. Mix 10 sec / Speed 4. Scrape down the sides of the mixing bowl with a spatula.
- Add the 1 tsp cinnamon powder, 0.5 tsp ginger powder, 0.25 tsp allspice, 265 g plain flour, 1 tsp baking powder, 0.5 tsp baking soda, and 0.25 tsp salt to the Thermomix bowl. Mix 10 sec / Speed 4. Scrape down the sides of the mixing bowl and repeat Mix 10 sec / Speed 4.
- Transfer the batter to a large mixing bowl. Add the reserved chopped apples with their juice, and the optional 120 g toasted and chopped walnuts. Gently fold them into the batter with a spatula until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the surface.
- Arrange the thinly sliced apple pieces on top of the batter, fanning them out and overlapping to cover the surface. Sprinkle the reserved cinnamon sugar mix evenly over the apples.
- Bake for 45 minutes in the preheated oven. Then, loosely cover the loaf with foil and bake for a further 15 minutes, or until a skewer inserted into the center comes out clean.
- Remove the bread from the oven and let it rest in the tin for 15 minutes. Then, carefully remove it from the pan and place it on a wire rack to cool for at least 1 hour before slicing and serving.
