Chocolate Square Pastries

Ingredients
- 100 g milk, lukewarm
- 25 g caster sugar
- 3 g dried instant yeast (approx. 1 teaspoon)
- 250 g strong bread flour
- 3 g salt (approx. ½ teaspoon)
- 1 small egg (approx. 50g), room temperature
- 25 g unsalted butter, softened and cut into pieces
- 60 g dark chocolate chips or chunks
- 1 small egg, for egg wash
- 1 tbsp milk, for egg wash
Instructions
- Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
- Add 100 g lukewarm milk, 25 g caster sugar, and 3 g dried instant yeast to the Thermomix bowl. Mix 2 min / 37°C / Speed 2.
- Add 250 g strong bread flour, 3 g salt, 1 small egg, and 25 g softened unsalted butter to the bowl. Knead 3 min / Dough mode.
- Transfer the dough to a lightly oiled bowl, cover with a clean cloth or plastic wrap, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
- Once risen, gently punch down the dough. On a lightly floured surface, roll the dough into a rectangle (approx. 20x15 cm).
- Cut the rectangle into 2 equal squares. Place half of the 60 g dark chocolate chips or chunks onto one half of each square.
- Fold the other half of the dough over the chocolate, pressing the edges firmly to seal. You can crimp them with a fork for a decorative edge.
- Carefully transfer the shaped pastries to the prepared baking tray. Cover loosely with a clean cloth and let them proof for another 30-45 minutes, or until visibly puffy.
- In a small bowl, whisk together the remaining 1 small egg and 1 tbsp milk for the egg wash. Gently brush the tops of the pastries with the egg wash.
- Bake for 15-18 minutes, or until golden brown and puffed. The exact time may vary depending on your oven.
- Remove from the oven and let cool slightly on a wire rack before serving.
