  1. Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. Add 100 g lukewarm milk, 25 g caster sugar, and 3 g dried instant yeast to the Thermomix bowl. Mix 2 min / 37°C / Speed 2.
  3. Add 250 g strong bread flour, 3 g salt, 1 small egg, and 25 g softened unsalted butter to the bowl. Knead 3 min / Dough mode.
  4. Transfer the dough to a lightly oiled bowl, cover with a clean cloth or plastic wrap, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  5. Once risen, gently punch down the dough. On a lightly floured surface, roll the dough into a rectangle (approx. 20x15 cm).
  6. Cut the rectangle into 2 equal squares. Place half of the 60 g dark chocolate chips or chunks onto one half of each square.
  7. Fold the other half of the dough over the chocolate, pressing the edges firmly to seal. You can crimp them with a fork for a decorative edge.
  8. Carefully transfer the shaped pastries to the prepared baking tray. Cover loosely with a clean cloth and let them proof for another 30-45 minutes, or until visibly puffy.
  9. In a small bowl, whisk together the remaining 1 small egg and 1 tbsp milk for the egg wash. Gently brush the tops of the pastries with the egg wash.
  10. Bake for 15-18 minutes, or until golden brown and puffed. The exact time may vary depending on your oven.
  11. Remove from the oven and let cool slightly on a wire rack before serving.
