Chocolate Cornflake Bake

Ingredients
- 100 g unsalted butter, cut into pieces
- 60 g golden syrup (approx. 4 tbsp)
- 200 g milk or dark chocolate, broken into pieces
- 150 g cornflakes
Instructions
- Line a 20x20 cm square baking tin with baking paper, ensuring there is an overhang on the sides to easily lift the bake later.
- Add the butter (100 g), golden syrup (60 g), and chocolate (200 g, broken into pieces) to the mixing bowl. Melt for 5 minutes / 50°C / Speed 2.
- Pause and scrape down the sides of the mixing bowl with the spatula. If the mixture is not fully melted and smooth, melt for another 1-2 minutes / 50°C / Speed 2.
- Add the cornflakes (150 g) to the mixing bowl. Mix for 30 seconds / Speed 2 / Reverse, using the spatula through the lid opening to assist in coating the cornflakes evenly.
- Transfer the chocolate-coated cornflake mixture to the prepared tin. Press down firmly and evenly with the back of a spoon or your hands to create a compact layer.
- Chill the bake in the refrigerator for at least 2 hours, or until it is completely set and firm.
- Once set, use the baking paper overhang to lift the chocolate cornflake bake out of the tin. Cut into squares and serve.
- For easy cleaning, immediately after use, add warm water and a drop of dish soap to the mixing bowl and run for 10 seconds / Speed 6.
