Chocolate Chip Banana Bread

Ingredients
- 280 g plain flour
- 25 g cocoa powder
- 1 tsp baking soda
- ½ tsp sea salt
- 60 g unsalted butter
- 350 g ripe bananas, peeled
- 60 g vegetable oil
- 180 g brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 150 g chocolate chips, divided
Instructions
- Preheat your oven to 175°C (350°F). Grease a 23 x 13 cm (9 x 5 inch) loaf pan with non-stick cooking spray and set aside.
- Add 280 g plain flour, 25 g cocoa powder, 1 tsp baking soda, and ½ tsp sea salt to the Thermomix bowl. Mix 5 sec/Speed 4. Transfer the dry ingredients to a separate bowl and set aside.
- Add 60 g unsalted butter to the Thermomix bowl. Melt 2 min/80°C/Speed 1.
- Add 350 g ripe bananas (peeled) to the bowl with the melted butter. Mash 5 sec/Speed 4. Scrape down the sides of the bowl.
- Add 60 g vegetable oil, 180 g brown sugar, 1 large egg, and 1 tsp vanilla extract to the bowl. Mix 10 sec/Speed 3 until well combined.
- Add the reserved dry ingredients back into the Thermomix bowl. Mix 15 sec/Speed 3 (Reverse) until just combined. Do not overmix.
- Add 110 g chocolate chips (approximately ¾ cup) to the bowl. Mix 5 sec/Speed 2 (Reverse) to gently fold them into the batter.
- Pour the batter into the prepared loaf pan. Sprinkle the remaining 40 g chocolate chips (approximately ¼ cup) over the top of the bread.
- Bake for 50-65 minutes, or until a toothpick inserted into the center of the bread comes out mostly clean. Some melted chocolate on the toothpick is fine, but you don't want a lot of gooey batter. Check at 50 minutes, as oven times can vary.
- Remove the pan from the oven and set it on a wire cooling rack. Let the bread cool in the pan for 15 minutes. Run a knife around the edges of the bread and carefully remove it from the pan. Let the bread cool completely on the wire cooling rack until slightly warm before slicing and serving.
