  1. Slice the chicken breast thinly. In a medium bowl, combine the sliced chicken with 1 tbsp soy sauce and 1 tsp cornflour. Mix well and set aside to marinate for at least 10 minutes.
  2. Add garlic and ginger to the clean Thermomix bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl.
  3. Add 30 g vegetable oil and the white parts of the spring onions to the bowl. Sauté 3 min / 120°C / Speed 1.
  4. Add the marinated chicken to the bowl. Cook 6 min / 120°C / Reverse / Speed 1. Remove the chicken and set aside, leaving any residual oil in the bowl.
  5. While the chicken cooks, prepare the vegetables: slice the carrot into thin matchsticks, shred the cabbage, and slice the red bell pepper. Keep the green parts of the spring onions for garnish.
  6. Add the sliced carrot and bell pepper to the bowl. Sauté 5 min / 120°C / Reverse / Speed 1. Scrape down the sides of the bowl.
  7. Add the shredded cabbage to the bowl. Sauté 3 min / 120°C / Reverse / Speed 1. Remove the vegetables and set aside with the chicken.
  8. Add 1000 g water to the clean Thermomix bowl. Bring to a boil 8 min / 100°C / Speed 1.
  9. Place the dried noodles into the simmering basket. Insert the simmering basket into the bowl. Cook according to package instructions, typically 8-10 min / 100°C / Speed 1. Use the spatula to gently stir the noodles occasionally to prevent sticking. Once cooked, remove the simmering basket with the aid of the spatula and drain the noodles. Set aside.
  10. While the noodles cook, prepare the sauce: In a small bowl, whisk together 3 tbsp soy sauce, 2 tbsp oyster sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp sugar, 1 tsp cornflour, and 50 g water until smooth.
  11. Empty the bowl of any remaining water. Add the cooked chicken, sautéed vegetables, drained noodles, and the prepared sauce to the Thermomix bowl. Gently combine 2 min / 90°C / Reverse / Speed 2.
  12. Pause and scrape down the sides and bottom of the bowl to ensure even mixing. Continue to combine 1 min / 90°C / Reverse / Speed 2.
  13. Serve immediately, garnished with the green parts of the spring onions.
