  1. Place 100 g cashew nuts into the clean, dry mixing bowl. Chop 3 sec / Speed 5. Transfer to a separate bowl and set aside.
  2. Add 1 onion, 4 cloves garlic, and 2 cm fresh ginger to the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of bowl.
  3. Add 20 g vegetable oil to the mixing bowl. Sauté 3 min / 120°C / Speed 1.
  4. Add 1 leek (sliced) and 250 g mushrooms (sliced) to the mixing bowl. Sauté 5 min / 120°C / Speed 1 Reverse. Use the simmering basket on the lid instead of the measuring cup to allow steam to escape.
  5. Add 500 g chicken breast (cut into pieces) to the mixing bowl. Cook 5 min / 100°C / Speed 1 Reverse. Place the simmering basket on the lid.
  6. Add 1 tbsp oyster sauce, 2 tbsp honey, 1/2 tsp chilli powder, 1 tbsp rice vinegar, 2 tbsp soy sauce, 2 tbsp ketjap manis, 1 tbsp ginger syrup, and 300 g water or chicken stock to the mixing bowl. Cook 8 min / 95°C / Speed 1 Reverse. Place the simmering basket on the lid.
  7. Pause, scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency and adjust seasoning with salt and pepper if needed.
  8. Add 250 g egg noodles to the mixing bowl, ensuring they are submerged in the liquid. You may need to break them to fit. Cook according to package instructions, typically 3-5 min / 95°C / Speed 1 Reverse. Use the simmering basket on the lid.
  9. Once noodles are cooked, perform a final stir 1 min / 90°C / Speed 1 Reverse to ensure even distribution and prevent sticking.
  10. Transfer the Chicken Cashew Noodles to a serving dish. Serve immediately, garnished with the chopped cashew nuts and fresh coriander.
