Chicken and Sweetcorn Soup

Ingredients
- 100 g boneless chicken thigh or breast, cut into 2 cm pieces
- 950 ml chicken stock or broth
- 60 g sweetcorn kernels (frozen, tinned, or fresh)
- 60 g sweetcorn kernels (frozen, tinned, or fresh), mashed
- 60 g carrot, peeled and cut into 1 cm cubes
- 1 clove garlic, peeled
- 1-2 eggs, whisked
- 2 tbsp corn starch
- 4 tbsp water
- ½ tsp salt, or to taste
- ¼ tsp white pepper, or to taste
- 1 tsp sesame oil
- 2 spring onions, thinly sliced, for garnish
Instructions
- Place 1 clove garlic into the mixing bowl. Chop 3 sec / Speed 7. Scrape down sides of the bowl.
- Add 60 g carrot, cut into 1 cm cubes, to the mixing bowl. Chop 3 sec / Speed 5. Set aside with the chopped garlic.
- Add 60 g sweetcorn kernels to the mixing bowl. Pulse 2-3 times on Turbo for 0.5-second bursts to mash. Set aside.
- Cut 100 g boneless chicken thigh or breast into 2 cm pieces. Thinly slice 2 spring onions for garnish and set aside.
- In a small bowl, combine 2 tbsp corn starch with 4 tbsp water and mix well to form a smooth slurry. In another small bowl, whisk 1-2 eggs with a pinch of salt.
- Add 950 ml chicken stock, the chopped garlic, and 100 g chicken pieces to the mixing bowl. Cook 5 min / 100°C / Speed 1 (Reverse).
- Add the chopped carrot, 60 g whole sweetcorn kernels, and the mashed sweetcorn to the mixing bowl. Cook 6 min / 100°C / Speed 1 (Reverse). Place the simmering basket on the lid instead of the measuring cup to allow for some evaporation and prevent splatter.
- Pour the corn starch slurry through the lid opening onto the blades while the Thermomix is running. Cook 2 min / 90°C / Speed 2 (Reverse).
- Slowly pour the whisked eggs through the lid opening while the Thermomix is running. Cook 1 min / 90°C / Speed 1 (Reverse). The egg will form delicate ribbons.
- Add ½ tsp salt, ¼ tsp white pepper, and 1 tsp sesame oil to the soup. Mix 10 sec / Speed 1 (Reverse).
- Taste and adjust seasoning as needed. Serve hot, garnished with the sliced spring onions.
