Cheesy Veggie Mini Muffins

Ingredients
- 100 g cheddar cheese, grated
- 50 g carrot, peeled and finely grated
- 30 g fresh spinach, finely chopped (or zucchini)
- 180 g plain flour
- 2 tsp baking powder
- 0.5 tsp salt
- 120 g milk
- 1 large egg
- 60 g vegetable oil
Instructions
- Preheat your oven to 180°C (fan-forced). Line a 12-hole mini muffin tray with paper cases or grease it well.
- Add the cheddar cheese to the clean, dry Thermomix bowl. Grate 5 sec / Speed 7. Transfer the grated cheese to a separate bowl and set aside.
- Add the carrot and spinach (or zucchini) to the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add the plain flour, baking powder, and salt to the bowl with the vegetables. Mix 5 sec / Speed 4. Transfer this dry mixture to the bowl with the grated cheese and set aside.
- Without cleaning the bowl, add the milk, egg, and vegetable oil. Mix 10 sec / Speed 4.
- Add the reserved dry ingredients (flour, baking powder, salt, vegetables, and cheese) back into the Thermomix bowl. Mix 10 sec / Speed 3, or until just combined. Be careful not to overmix the batter.
- Spoon the batter evenly into the prepared mini muffin tray, filling each hole about two-thirds full.
- Bake for 15-20 minutes, or until the muffins are golden brown and a skewer inserted into the centre comes out clean.
- Let the mini muffins cool slightly in the tray for a few minutes before transferring them to a wire rack to cool completely.
